Mochi's Recipe of the Week: Butternut Squash Soup

Hello my lovelies! Mochi here with round two of "recipe of the week," improved with the addition of pictures! Our recipe this time is a very delicious soup made with butternut squash. Once again, the recipe hails from, my favorite online recipe database.

I've made similar soups in the past, but this recipe calls for the inclusion of star anise, which is something I hadn't considered in the past. It makes sense, though; butternut squash is naturally sweet, and anise boosts the sweetness, adding richness to the otherwise savory soup.

Here's what you'll need:

1 tablespoon finely grated peeled fresh ginger
2/3 cup chopped shallot
1 garlic clove, thinly sliced
3 whole star anise
2 tablespoons unsalted butter
1 3/4 lb butternut squash, peeled, seeded, and cut into 1/2-inch pieces (5 cups)
4 cups chicken stock or broth
2 cups water
1/4 teaspoon salt
1 tablespoon vegetable oil

To prepare:
Cook shallot, garlic, and anise in butter in a 3-quart heavy saucepan over moderate heat, stirring, until shallot is softened, about 5 minutes. Add squash, stock, and water and simmer, uncovered, until squash is very tender, about 20 minutes. Remove star anise.

Purée soup in 2 batches in a blender (use caution when blending hot liquids) until very smooth, about 1 minute per batch, then transfer to cleaned pan and keep warm, covered.

I couldn't find whole star anise, so I got pure anise extract from the spice aisle instead. I also added one medium-sized sweet onion and about one to two cups of mushrooms. The recipe on epicurious calls for shrimp as well, but I made this soup for a friend who was recently hospitalized and can't eat meat for the time being. Another change I made was to add a dollop of Greek yogurt for an extra creamy tang. As suggested, I garnished with a sprig of cilantro.

How Do I Rock This??

Hello my fellow Pudgies!! Pix here with my new bi weekly post titled How Do I Rock This? I plan on taking fashion trends that seem to only be for twig girls and show ways you can rock them as a plus size girl.

SOOOO the very first trend is going to be this:

I know!! I can hear the WTFs from here but it can be done!! I'm a size twenty four and I have rocked short shorts!! By adding one thing...stockings!!!

I normally go with black for the slimming look but you can rock colored too!! Just stay away from white stockings and you will be set!!

Rock this look even further by adding a pair of kick ass boots!!

I highly recommend Torrid to find shorts, stockings and boots!!!

Mochi's Recipe of the Week: Saag Paneer

Unless you're already familiar with a wide range of ethnic cuisines, the name "saag paneer" probably doesn't sound super appealing. I always enjoy trying new foods, since even dishes with unappetizing names can be quite delicious.

Such is the case with saag paneer. This is a vegetarian Indian dish made primarily with spinach, cheese, and bell peppers. You can find the recipe here, along with video tutorials on how to prepare it.

When I cooked this for myself, I didn't add the spicy peppers since I'm not a fan of hot foods. The spinach and green bell peppers blended into a sweet, mild sauce, and the garam masala (a combination of fragrant spices) added a lot of flavor. I used cheese we already had in the fridge (I'm not sure exactly what type. My mother purchased it from a local European market, though.), and it ended up melting when I tried to fry it. I figured, "oh well. 'In for a penny, in for a pound,'" and added the melted cheese to the spinach sauce.

The finished product is really delicious over rice, or as a warm dip for bread or chips. You can even substitute the cheese with tofu for a vegan dish, or add chicken or steak to it if that tickles your fancy. It's still a healthy meal, with lots of color and spices equaling lots of great nutrients.

Blogger Profile: Pix

Hello there! My name is Pix and I am the second half of Pudgie Couture's fabulous team. I can't tell you how excited I am to start this blog with my girl Mochi. The moment Mochi mention the idea of a fashion blog for plus size girls I knew I'd be on board 100%.

Who is Pix?

Well I am a twenty-three year old plus size girl working in retail. For the longest time I've had issues with how fashion seems focaused on size twos. I feel like the best way to help the plus size fashion community is sharing my knowledge in finding cute and fabulous outfits in all sizes. One thing that you will see a lot from me is deals, I am a label whore but like most girls my age I don't make the money to get the labels I love. I'm always on the look out for the best prices on things and I am happy to share my finds on this blog. Another thing is food, like Mochi I LOVE IT. Coming from a long line of Southern cooks the kitchen is somewhere I spend a lot of time. We hope to bring you healthy and yummy things that are fun and easy to make.

My fashion infulcenes are all over the place. From the streets of Japan to Marie Antoinette, I just love fashion and I think to have a well rounded wardrobe you need to take from everywhere. Regardless of where you strut your stuff (Mochi and I rock the streets of ALABAMA) or what size you wear you can always be Fabulous!!!

Blogger profile: Mochi

Hi everyone! I'm Mochi, one of the two writers who will be bringing this blog to you on a semi-regular basis. Pudgie Couture is a project that is very close to my heart because of my love for fashion and fabulousness despite having a little junk in the trunk, and I sincerely hope that you will enjoy reading this blog as much as my buddy and co-blogger Pix enjoy writing for it.

A little about me:

I'm twenty-five, female, and have an art degree and a passion for fashion! Now, this doesn't necessarily mean that I meticulously follow every high-end designer and can tell you exactly what is in each of their spring/summer collections, but I try to keep abreast of current fashion trends and where they're headed. I also love historical and ethnic fashions. My favorite fashion era is definitely the Roaring Twenties. Those flappers had it going on!

One thing you'll probably be seeing a lot of from me is reviews of makeup. I love makeup, especially eye shadows and lip glosses. Whether they come from department store counters or independent online companies, I'll be talking about a ton of cosmetics. Since I'm an avid cook and baker as well, I'll be posting health-conscious and delicious recipes from time to time.

I sincerely hope that you enjoy Pudgie Couture. We have no idea how far this project will take us, but we anticipate a future full of awesome things.
